Chopped Summer Salad
Serves 2
- 4 green cabbage leaves
- 1 tomato
- 1 cucumber
- 1 cubanelle pepper
- 6 radishes
- 3 spring onions
- 1 garlic clove
- 2 tablespoons finely chopped fresh dill
- 2 tablespoons finely chopped fresh parsley
- 1 teaspoon salt
- ⅓ teaspoon ground black pepper
- ⅓ teaspoon red pepper flakes
- 1 tablespoon fresh lemon juice
- 1 teaspoon vinegar (5%)
- 2 tablespoons olive oil or grapeseed oil
- Finely chop all the vegetables and herbs, and put them in a bowl.
- Add the salt, black and red pepper, lemon juice, vinegar and oil. Toss the salad well, and serve right away. This salad goes well with Turkmen Pilaf, Iraqi Turkmen Pilaf, or Shish Kebab.
